COOKIE TIME
Ok--you asked for it, so I will publish some recipes. If it is real humid (like Florida), bake a minute or so less, so as not to have dried out cookies!
Fudgy Cappacuino Cookies
1/3 cup softened butter
1 cup packed brown sugar
2/3 cup unsweetened cocoa
1 Tablespoon Instant coffee granules
1 teaspoon baking soda
1 teaspoon cinnamon
2 egg whites
1/3 cup vanilla yogurt
1 1/2 cup all purpose flour
1/4 to 1/2 cup granulated or powdered sugar
Mix butter 30 seconds until creamed. Add brown sugar, mis lightly, and add cocoa, coffee, soda and cinnamon. Beat until combined. Beat in eggs, yogurt and add flour. Mix well. Cover and chill three hours. Preheat oven to 350. Lightly grease cookie sheeets. Place 1 inch balls of mixture in sugar and roll to coat. Place 2" apart of cookie sheet. Bake at 350 8 to 10 minutes.
